Preheat oven to 400°F. Coat a 13x9 baking dish with nonstick cooking spray.
In a medium bowl, mix together 1 cup of shredded cheese, ricotta cheese and tomatoes. Season with salt and pepper if desired. Spread about 3 tbsp. of cheese mixture onto each turkey slice. Roll up and place in baking dish, seam side down. Sprinkle remaining 1/2 cup shredded cheese over top.
Bake uncovered for about 25 minutes, or until internal temperature reaches 165 degrees.
Meanwhile, in a small saucepan over medium heat, cook gravy for 3 to 5 minutes, or until heated through, stirring occasionally.
To serve, divide egg noodles between 6 plates. Arrange 2 turkey rolls on each plate and spoon warm gravy over top.
