Herb-Roasted Pork Loin with Bourbon Gravy

Ingredients

  • 4 1/2 pound boneless pork loin, tied
  • 2 tablespoon olive oil
  • 1 tablespoon fresh thyme   chopped
  • 1 small onion   chopped
  • 1 large garlic clove   minced
  • 1 jar (12 oz.) Heinz® HomeStyle Pork Gravy

Directions

  • In a small bowl, combine the oil, thyme, onion, and garlic. Season with coarse salt and freshly ground pepper to taste. Rub mixture onto the pork loin, and place in a large roasting pan. Chill the pork, covered, overnight.
  • Roast pork in a preheated 350 degree oven for 50 minutes to 1 hour or until a meat thermometer registers 155 degrees. Remove from the oven and transfer it to a cutting board. Let the pork stand, covered loosely with foil, for 10 minutes.
  • While pork is standing, heat the Heinz HomeStyle Pork Gravy in a small pot to a simmer.
  • Discard the strings from the pork, cut into 1/2 inch thick slices and serve with gravy.
  • Serve the pork roast with buttered carrots and garlic mashed potatoes.
