Chicken Cordon Bleu

Ingredients

  • 1 cup (4 oz.) sliced fresh mushrooms
  • 1/4 teaspoon thyme
  • 1/8 teaspoon ground nutmeg
  • 3 tablespoon butter or margarine
  • 4 large skinless, boneless chicken breast halves (about 11/2 pounds)
  • 4 slices Swiss cheese
  • 4 slices deli ham
  • 1 jar (12 oz.) Heinz® HomeStyle Classic Chicken Gravy
  • 1/4 cup dry white wine or water

Directions

  • In large skillet, cook mushrooms, thyme and nutmeg in melted butter until mushrooms are tender.Remove from skillet.
  • Place chicken between waxed paper or plastic wrap; flatten to 1/4-inch thickness.Season with salt and pepper.Place one ham slice and one cheese slice on each breast.Roll chicken, jelly-roll fashion, tucking ends in; secure with toothpicks.In same skillet, brown chicken on all sides.Stir in gravy and wine.Return mushroom mixture to skillet.
  • Cover and simmer 10 to 15 minutes or until chicken is done.Remove toothpicks before serving.

Tips

  • For convenience buy a bag of individually frozen skinless boneless chicken breasts.It is easy to take out the number if servings needed and return the rest to the freezer.
