Preheat oven to 400°F. Coat an 11x8 baking dish with nonstick cooking spray. In a large bowl, whisk together gravy, mustard and sugar until smooth. Stir in ham and potatoes. Spoon evenly into baking dish and sprinkle walnuts on top.
Bake uncovered for about 25 minutes, or until internal temperature reaches 165 degrees.
If desired, substitute chopped walnuts with chopped pecans.
